Potlucks can be fun, delicious and safe if all use good food safety skills! Here are some reminders…
Preparation: Use safe food handling and storage techniques at home.
Transportation: Cold food should be transported in a cooler or in a container with ice packs. Hot food should be kept at 140F or warmer, and is best transported in a slow cooker pot wrapped in paper bags or towels to stay warm. Casseroles can be wrapped with aluminum foil. Insulated bags work for either hot or cold food.
Presentation: Please attach a label listing all ingredients so that those with special dietary needs can safely select food. Also, please bring serving utensils. (Label serving dishes and utensils so that you are sure to get them back!)
Storage: There is a commercial refrigerator, and adequate places to plug in slow cookers. No ovens, stoves or microwaves are available – so please bring hot items held to temp and ready to serve. Keep eggnog, cheesecake, cream pies/cakes with whipped cream or cream cheese frosting refrigerated or in shallow containers on ice to keep them cold. If not refrigerated, throw out these food items after 2 hours.
